Yamo's Smoked Pulled Lamb, Mint and Pomegranate Salad
1 Smoked leg of lamb
100gm fresh, washed rocket leaves
100gm fresh, washed baby spinach
4 tbsp freshly chopped mint leaves
4-5 tbsp pomegranate seeds
2 tbsp shaved cheddar cheese
3 tbsp extra virgin olive oil
1 tsp lime juice
Pinch of salt
Pull and shred the meat off the smoked leg of lamb.
Arrange the rocket and spinach leaves over a serving plate. Scatter the mint leaves and pomegranate seeds.
Combine the extra virgin olive oil with the lime juice and salt and pour over all the lamb, leaves and mint.
Sprinkle the shaved cheddar cheese finally and serve.
