Yamo's Chorizo and Chicken Paella
Treat the family to this Mediterranean feast using some of our wonderful products.
400gm chicken fillets, cut each piece into 4
4 tspn olive oil
1 large onion, chopped finely
1 tspn crushed garlic
1 tspn crushed ginger
1 small pinch of saffron threads
200gm chorizo sausage, cut into pieces
2 cups arborio rice
4 cups of water
2 tomatoes chopped
Season with salt and pepper
Preheat the oven to 180 degree Celsius.
In a large saucepan bring the water to simmer over high heat. Remove from heat and add the saffron threads, cover and set aside.
Heat the oil in a large frypan, add the onion, garlic and ginger.
Then the chicken and brown on both sides.
Add the chorizo sausage to the pan and cook for two minutes or until browned.
Reduce the heat, then add the rice, cooking for 2 minutes till the pan is dry and the rice is coated with oil. Stir in the warm saffron water.
Transfer the rice mixture to a paella pan.
Nest the chicken into the rice mixture, spacing evenly and pour any accumulated chicken juices over. Sprinkle with the chopped tomatoes and season with salt and pepper.
